RECIPE - Aunt Claires Chicken

Aunt Claire's Chicken
4 Large Boneless/Skinless Chicken Breasts (cut into small nugget size pieces)
1 medium jar of green giant whole mushrooms (drained)
3 Eggs
Chicken Bullion Cube
1 stick Margarine/Butter
Bread Crumbs (original, not flavored)
Sliced Gruyere Cheese (Can Substitute Mozzarella)

Beat 3 eggs. Soak nugget size pieces of chicken in eggs at least one hour. Coat the soaked chicken with bread crumbs. Brown chicken on both sides in a pan with margarine.  Spray coat a baking dish.  Place browned chicken in a casserole dish in a single layer. Brown mushrooms in a saute pan with margarine and sprinkle them over the chicken. Place sliced cheese on top of the chicken. In the microwave, place one cup of water with a bullion cube and boil (approx 1-2 min). Stir if necessary and pour over chicken. Cover with foil and bake at 350 for approx 30-45 minutes depending on your oven. Check chicken to be sure there is no pink and the juices are running clear.

Cover with foil and bake at 350 for approx 30-45 minutes
VOILA! DELICIOUS!
And great left over warmed or cold!




I LOVE this dish! It is so good and even if you left the mushrooms out it is great. I'm the only one who eats the mushrooms and the others just pick them out and give them to me. The prep time is a little long b/c you have to cut your chicken, soak it and brown it, but if you start an assembly line and have all your ingredients and pans ready, it goes really fast. It's great with green beans, stuffing or mashed potatoes as side dishes.
