RECIPE - Easy Chicken & Potato Dinner

Here is an easy and delicious chicken and potato recipe for the crock pot.

Easy Chicken and Potato Dinner

Serves 6

4 fresh boneless, skinless chicken breasts
4-6 medium potatoes, peeled & cut into wedges or thick slices
1/2 cup Italian Dressing (I use more for the flavor)
1 tbsp Italian Seasoning
1/2 cup grated Parmesan cheese

Place chicken in bottom of crock pot. Sprinkle with half of the Italian dressing, spices and the grated cheese. Put the potatoes on top or around the chicken. Sprinkle with the rest of the dressing, spices and cheese.

Cook on low for 6-8 hours, or until chicken is done and potatoes tender.


MY TIPS
I cut the chicken in half so the 4 breasts become 8 pieces.

The chicken ALWAYS gets done before my potatoes. It never fails that my potatoes are harder than I'd like them to be. I usually will take them out and try to microwave them to soften them. If the chicken stays in too long (to allow the potatoes to cook), then the chicken gets to hard. So it may be worth slightly boiling the potatoes before putting them in the crock pot... just a little and let the crock pot do the rest.

I always just eyeball everything and never measure the spice or dressing. I just sprinkle it all over each layer... give it better flavor.
